【White Rice】

White Rice

You might wonder if it is excusable to continue eating white rice because a family member will not eat brown rice even it is healthier. Brown rice was our staple food since the beginning of the farming civilization in the Jyoumon Period (~400B.C.). But white rice replaced it about 200-300 years ago due to its taste. Our white rice goes through a particular polishing process to produce tasty white rice. In order to avoid damaging our rice, we separate the process of removing the thin surface layer into 3 stages. We negatively charge the rice to avoid oxidization and to seal in the nutrition. This is the reason that our rice does not have any discoloration. Next we remove small stones, broken grains, and other objects by putting it through a sifter. Moreover, we put it to an optic sorter to check each grain for shape and insect damage. We place our rice into this optic sensor twice for thorough checking. After much stringent checking, the final stage is to measure the rice and deliver it to you. In order to enjoy its maximum flavor, wash the rice well so as not to leave any bran in it. Some people think that the bran has to remain. There is not much benefit to keeping bran in white rice since most of the nutritious part of the embryo buds has been removed. In this case, it is best to enjoy the maximum taste of lustrous white rice by washing out all bran until the water is clear.

【Butsuki Rice】

Is it possible to enjoy the nutrients of brown rice with the flavor of white rice? The rice that makes this wish come true is Butsuki Rice. The bran of Butsuki Rice is removed but retains the embryo bud. It is called Gobutsuki Rice when 50% of bran layer is removed, and at 70% it is called Hichibutsuki Rice. Since the bran is removed there will be less fiber, but phytic acid from embryo buds, which is the core nutrient in brown rice, still remains. Also, you can cook it just like white rice. You can cook it by itself or by mixing it with white rice. You can enjoy the benefits of brown rice easily.
